What It Usually Is

Infinite switch failed: contacts welded shut means full heat no matter the knob; contacts open means no heat at all.
Heating element open, or the wiring and terminals at the element burned from years of heat.
Indicator light out but the unit heats: usually just the lamp, not the heater.
Thermostat-style controls on warmer cabinets failed or drifted, so the cabinet runs hot or cold.

Check This First

Turn the knob through its range: does the indicator light cycle, stay on, or never come on?
With power off, look at the wiring at the element for browned insulation or loose spade terminals.
An infinite switch is tested by cycling: it should click on and off across the range, not sit welded on.
Note whether the product is too hot or too cold, and whether it changed suddenly or drifted.

When To Call

Product is being over-cooked or dried out on the chute.
No heat at all and the light is off.
You smell hot insulation at the base of the slicer.

What is an infinite switch?

A cycling control that turns the element on and off in a ratio set by the knob. It does not measure temperature; it just runs the heater a percentage of the time. When its contacts weld, the heater runs 100 percent.

Is the roast beef too hot because of the slicer or the warmer?

Usually the chute heater or its switch, not the slicer motor. We test the chute circuit first because it is the cheap answer.

Do you work on slicers and hot-holding equipment?
