Fryer Pilot Won't Stay Lit

What It Usually Is

  • Thermopile weak or failed: the pilot lights, you hold the button, you let go, it dies. The most common cause on standing-pilot fryers.
  • Pilot assembly dirty or orifice partly blocked: a lazy yellow pilot flame that never heats the thermopile enough.
  • High-limit switch tripped or failed: the safety circuit is open, so the gas valve will not hold.
  • Gas valve failed, or the pilot solenoid inside it: pilot is strong, thermopile tests good, valve still drops out.
  • Gas supply: a closed quick-disconnect, low pressure, or another appliance starving the line.

Check This First

  • Does the pilot light at all? Is the flame blue and steady, or yellow and lazy?
  • Does it stay lit while you hold the button and die when you release it? That is the thermopile circuit.
  • Is the oil level above the tubes or elements? A low vat can trip the high limit.
  • Are other gas appliances on the same line working?

When To Call

  • The pilot drops out when you release the button.
  • The fryer lights but shuts down after a few minutes.
  • You smell gas. Shut the valve and call.

Can I replace the thermopile myself?

It is a simple part, but the pilot assembly, gas fittings, and the high-limit circuit need to be checked at the same time, and a wrong gas fitting is a fire. We do it in one visit with the part on the truck.

Why does the high limit keep tripping?

Low oil, a dirty or fouled temperature probe, or a controller calling for heat it should not. Cleaning the sensors and refilling the vat fixes most of them.

Do you service pressure fryers?

Yes, including lids, gaskets, and the safety interlocks.
